Afang Soup (Akwa ibom Style)
Hey foodies!
So as usual I entered the kitchen and you know me, I don't like staying there for hours.
Afang soup was on the agenda. It's actually quite easy to make. You'll need;
- Afang (you can get the leaves washed, finely sliced and ground for you)
-water leaves (I grow my own....bossette;) )
-ground fresh pepper (one cooking spoon, depending on how hot you want yours)
-proteins!!!! (Beef, snails, dry fish, stock fish, pomo (cow hide) Trust us)
-ground crayfish (I usually buy ground dry shrimps.... awesome!)
-palm oil(3 cooking spoons)
-seasoning cubes (2)
-salt (to tastes)
Procedure;
- wash all proteins and put in a pot
-add salt seasoning cubes, ground crayfish and a little bit of water
- let to boil for about 10mins and take snails out (we want a crunch)
- cut water leaves into small pieces, boil in a pot till water dries
-add water leaves into stock pot (pot with all the proteins)
- let boil for about 2 minutes then add your afang leaves. More like spread it and don't stir. Let cook for about 2 minutes then stir.
- add fresh pepper and palm oil.
You can serve with any swallow. Personally, I think it's best with fufu.
