PALM OIL STEW

Hey darls,
I've been craving palm oil stew the yoruba way with beans for a while now, finally got time (exam tinz) yesterday so I made some sharp sharp palm oil stew. Its basically almost the same as our regular Nigerian tomato stew but with a simple twist. You use palm oil instead of vegetable oil or olive oil. Here's how I made mine.
Ingredients;
-palm oil (3 cooking spoons)
-fresh tomatoes (10 or more depending on the quantity of stew you want. I usually don't add tin tomatoes)
- beef, shaki(optional), pomo (optional)
-onions (2 whole)
- fresh pepper (to taste)
-seasoning cubes ( 2)
- salt (to taste)
- spices (curry, thyme, a little bit of dry pepper)

EDIT; To add to this recipe, I've discovered the secret to getting that palm oil stew flavor and a better stew in general. Here it goes; after adding your palm oil to the pot, allow to bleach for about 6 minutes: pour oil in the pot, put on medium heat, cover as hot oil exposed to air is flammable, allow to heat till clear. During this process, make sure your kitchen is properly ventilated. after heating, leave closed for and extra 2 minutes to allow the oil cool before opening the pot. I'll identify the relevant procedure portion with this ***
Procedure;
- steam meats with a bit of onions, a seasoning cube, the dry pepper,salt....anything else you add.
- blend your tomatoes with the fresh pepper and an onion.
-boil mixture till most of the water content is gone.
-In a heated non-stick pan add 2 cooking spoons of palm oil****
- fry meats till slightly brown. Take them out and set aside.
-Put in some chopped onions and then pour in tomato, pepper and onion mixture. Allow to fry to take away any sour taste asin image 2 below.
-when properly fried, add in meat stock asin image 1, season and spice to taste, add in fried meats and for a fresh palm oil flavour add in the last cooking spoon of palm oil.
NOTE;
If you don't like thick stews, you can add water to get the consistency you want.
- cover and allow to cook for a few minutes.
-turn off heat and allow to sit for a while
Viola!!!
You can eat this with rice, beans, yam....however you like.  It's stew!
