BREAKFAST!
Hello awesome people! This blog post is about one of my favourite things to eat and it's super easy to make too!
Ok, I'm writing exams and this semester, I realised engineering is no joke. I've been asking myself "wetin carry me come here sef?"
For ages now, lol, I haven't had time or the energy to have breakfast....I know I know...it's the most important meal of the day, but wah a baby girl gonna do...no time.
Finally got around to making it yesterday around 2pm ish (side eyes)....ehnnnn..it can go as lunch as well. The baby of the day is a house hold staple Yam and Egg sauce!
You'll need;
Yam (as many pieces as you can finish)
3 medium to large eggs.
3 fresh tomatoes.
1 onion.
1/2 tspn of salt.
3-4 freshly ground red peppers or 1/2 - 1 tspn of dry pepper depending on how hot you like your food.
1 green pepper ( the flavour is awesome
1 seasoning cube (my favs are knorr and Maggi...what's yours?)
1 cooking spoon vegetable oil
Procedure;
- roughly slice tomatoes, green pepper and onions
- set pan on heat, when dry, add oil nd let it get a little above warm.
- add tomatoes, onions and green pepper. Stir and leave to fry.
-add your spices and seasonings.
-break eggs into a bowl, add a pinch of salt and a little bit of dry pepper, whisk until yolk and egg white blends.
-pour egg into the pan.
- turn at intervals to enable proper cooking of both sides.
-serve with the boiled yam or plantain or both!
P.s I don't use fancy serving pictures because we all know how we serve food in uni. Straight to the point.
