TOMATOE SAUCE

It's been a minute. I've been so busy preparing for finals and other extra curricular activities I've not had time to experiment in the kitchen.

So, the other day, I got back really late and all I had was white rice...and the lady who sells fresh foods like tomatoes, carrots...
I ended up creating or modifying the already existent tomato sauce. Here's how I made mine. This recipe serves 3 people.

Ingredients;
- fresh tomatoes  (6 pieces )

- fresh red pepper  (4-6 pieces depending on how hot you like your food)

- green pepper  (1)

- onions  (1)

- carrots (3)

- vegetable oil / olive oil ( 2 cooking spoons)

- sausages/ minced meat/ diced boneless chicken/ dried fish (whatever protein you prefer is suitable)

- salt and pepper  (to taste)

- seasoning cubes ( 1)

- crayfish (2 tablespoons)

- soy sauce (2 teaspoons )

- curry, ginger, garlic powder  ( 2 teaspoons each)

Procedure:

-Cut fresh tomatoes and pepper into tiny pieces.

- cut carrots into cubes and slice onions.

- roughly cut green pepper

- in a heated sauce pan, add oil and when hot add onion. Reduce heat to medium and allow onions to fry for about 1 minute.

-add protein of choice, stir and allow to fry for another 1 minute then add soy sauce.

- add the rest of the vegetables, crayfish and stir.

- add seasoning cubes, curry powder, garlic powder, ginger powder stir and allow to cook for about 3 minutes.

This way we preserve the freshness off all the vegetables of we cook everything under 6 minutes.

If you have stock from your chicken you can add that too for extra flavour.

You can serve this sauce with rice, pasta, noodles, boiled or fried yam, boiled or fried plantain....the list is endless.
