Okro and Melon Soup

I've been all over the place trying to finish my 3rd year project and defence. Ate rice every single day...ugh!

To celebrate my freedom(insert beyonce 's freedom) I decided to eat pounded yam. I had very little melon (egusi) left and very little okro. You know me, I can't stress,;I combined the two! It was awesome! This is how I made it :

To serve 2

Ingredients;
- okro (8 fingers)
- Ground melon (2 cooking spoons )
- Beef/chicken /turkey  (half a kilo )
- dry fish (2)
- ground crayfish ( 1 cooking spoon )
- palm oil (2 cooking spoons )
- pepper and salt ( to taste)
- onions (1 whole)
- seasoning cubes (2)

Procedure;
- wash and prepare meat as I have described in previous posts.

- add washed fish and crayfish after 10 minutes. Allow to boil till meat is tender.

- add your melon and allow to boil. Stir constantly adding water to prevent it from burning. Allow to cook till you can see it's oil on the surface.

- add your palm oil, stir and allow to cook for about 2 minutes

- add your okro which you've washed and cut into very small pieces

- at this point I whip the soup with my wooden spoon as if I was whisking eggs. It's fun to do and also make the soup draw a little more. You know that okro effect.

- allow to boil for about 5 minutes. Okro is a vegetable and shouldn't be over cooked.

- serve hot with a side dish of your choice. I had mine with pounded yam ( I used yam flour. Lol ) you can eat it with eba (ground cassava mixed with hot water) , semo(rice flour ), some people even eat it with rice.
