RECIPE - CHICKEN PEPPERSOUP
Hello hello!
Before I go into the recipe let me just add a quick update *drumroll* your girl is now an engineering graduate!! Yaaayyyy!
This means consistency with my post and a lot of switching up things in this space.
During my finals and preparation for my project defense, I started craving pepper- lots of pepper. What better food to make than peppersoup?
I made mine with chicken but using the same recipe you can substitute chicken with any meat of your choice. In fact the grandfather of pepper soups is assorted meat peppersoup. Just like it's name it has assorted meats and is not your mate in anyway please *dramatic hair flip* attached is sought of a pictorial.
You'll Need;
- Chicken
- Pepper ( I used both fresh and dry. To taste. More pepper equals more heat)
- Peppersoup spice (I get this from my local Nigerian market. I travelled with mine from Nigeria 😂. The more you add the spicier your soup. I used about 4 table spoons)
- garlic and onions (I used one of each. Too much garlic is overwhelming)
- Crayfish (because I add Crayfish to almost any food. I used 2 tablespoons. You can add more.)
- Nutmeg ( half a teaspoon Nutmeg powder)
- salt and seasoning cubes (to taste)
- Fresh basil / scent leaf
Procedure;
- wash / clean chicken and place in a pot.
- add your chopped onion and garlic. Add salt, dry pepper, Nutmeg, seasoning cubes, Crayfish and peppersoup spice.
- mix and set on heat. At this point I like to add just a little water. This let's the chicken boil in its own juices incorporating all the spices added. Monitor to make sure it doesn't burn.
- add as much water as you'd want your soup to have. Taste and adjust spices. I like taking my soup with boiled plantain. After boiling for about 10 to 15 minutes, I add my plantain cut in bits. This way, the plantain is spicy too!
- allow to boil till chicken is tender. Add minced fresh pepper and basil. Stir and allow to boil. Take off heat.
You can already see why this is one of my favorite foods to make, it's so simple with minimal prep time. It's also therapeutic for colds.
