BEANS PORRIDGE

"Not every time carbohydrate!!!" My mother's mantra to justify her cooking the dreaded beans when I was younger.

These days my love for beans is on another level!!

Trust me to have a stress free method of preparing this "bae" of mine.

Ingredients;
- beans (2 cups)

-crayfish  (2 cooking spoons)
I feel crayfish is the mainest in this dish

-palm oil ( 3 cooking spoons)

-onions ( 1 whole)

-pepper, salt and seasoning cubes ( to taste)
I usually use 2 seasoning cubes

Optionals;
Diced beef, dry fish, minced meat, diced cow hide (pomo) , mushrooms  (roughly chopped)

Procedure;
- pick out dirt from the beans, wash and place in a pot.

- add water to cover beans, bring to a boil and drain water ( I really don't know why I do this. I think it's to remove the preservatives used to preserve the beans)

- add fresh water and let to boil till soft. Add crayfish. Adding salt at the beginning increases the cooking time of the beans.

- when soft, add salt, pepper, seasoning cubes, some of your chopped onions and palm oil

- add the rest of your onions. Stir and turn off heat.

Make sure not to add too much water at once but bit by bit from time to time to prevent  the beans being too watery.

You can serve this with fried plantain, fried yam, boiled yam, (a personal  fav) bread, garri (dried ground cassava), sweet corn.....get creative!
