NIGERIAN JOLLOF

So, after staying away from my kitchen for a while because of exams, we decided to bond again. I really worked with all the ingredients I had already. This jollof rice was quite impromptu but the ones unplanned are usually the best aren't they?
This is how I made my jollof rice.
Ingredients;
- rice : one and a half cups
- chicken
- tined tomatoes : I used one medium salsa tin
- onions : one and a half
- pepper : I used dry Cameroon pepper
- seasoning cubes : 3
- garlic and ginger : fresh, to taste
- salt : to taste
- curry and thyme : 2 teaspoons each
- vegetable oil : 2 cooking spoons
Procedure;
- wash chicken and cook with chopped garlic, ginger, some salt, pepper and 1 seasoning cube.
- once soft, fry till golden brown. Set aside.
- wash rice and had to boiling water. Add salt and half a seasoning cube. Boil till almost soft.
- open tined tomato, put paste in a bowl and add some water till you get a smooth consistency.
- in a pot add oil, sliced onions ( just one)
Add tomato and water mix, add spices, chicken stock and let to fry for a bit.
- add little cooking spoons of rice and stir in mixture. Repeat till your sauce to rice ratio looks just right.
- add a little water and remaining sliced onions. Cover and turn off heat after a minute.
IT'S DONE!
serve with fried chicken and a cold drink. Lol.
