VEGETABLE SAUCE
Hello guys!
I've been on a high carb diet this semester. This is my attempt to avoid the weight loss I experience every semester. As you know, rice is now a regular on my plate so this sauce is an attempt to break the monotonous meal that is rice and stew.
This sauce is very quick to make especially if you've prepared all your ingredients before time. Cooking time is about 20 minutes!
You'll need:
African Spinach
Dried/smoked fish
Beef (optional)
Palm oil (one and a half cooking spoon)
Tomato, pepper and onion blend (2 cooking spoons)
Onions (sliced. Half of a whole)
Salt (to taste)
Cray fish (be generous)
PROCEDURE:
Place a clean pot on medium heat. When dry, add palm oil, when hot, add most of your sliced onions
Add salt and your blend of tomatoes, pepper and onions. Add crayfish and dried fish (wash and de-boned). Allow to cook till sauce has been reduced (that is the water content has been reduced and it's thicker)
Add seasoning and then your chopped vegetables and leftover onions. Stir and take off heat after a minute. You don't want to over cook your vegetable.
Serve with rice, beans, plantain, swallow...the list is endless! You know my love for versatile foods!
