The BEST Breakfast Egg Sandwich
Hello Foodie Fam!
It's week five (5) of the lock down and at this point I leave my house only when absolutely necessary. For the first time in months I have had the time to make and eat breakfast, say no to hunger pangs in traffic!
One fact about me is written in stone and that is; I love eggs. None of that runny mess but it's well done versions. The star of this delicious recipe is of course the egg. I love this recipe because it is so easy to make and very quick to put together. It's a perfect balanced breakfast that can be eaten on the go!
Ingredients;

Ingredients;
- Eggs
- Mayonnaise
- Sliced bread
- Butter
- Salt and Pepper
Optional additions;
- Avocados
- Fresh cherry tomatoes
- Mustard
- Cheddar cheese
- Whatever you fancy!
Procedure;
- Boil eggs and transfer into cool water
- Peel eggs
- In a clean bowl, add peeled eggs, salt, pepper to taste and as much mayonnaise as you like. At this point add your avocados if you have.
- Using a masher or a fork, mash your ingredients till creamy or to preferred texture
- Spread some butter or mayonnaise on your sliced bread
- Spread your creamy egg mixture evenly on your bread with whatever else you're adding to your sandwich and cover with a plain slice of bread
- Set pan on medium heat and add some butter. Spread butter to cover pan surface
- Place your sandwich in pan and allow to toast till golden brown. Flip carefully and repeat on other side
In my experience, two eggs will make two sandwiches.
